These little sweet heat crispy tortilla chips turned out great! I made one batch and ate them all plain....which you can totally do and be forever happy...OR you can make up some fresh mango salsa and have it be a little more festive! As with most salsa recipes, feel free to adapt the recipe to suit your tastes...It's what I love most about salsas, they are so easy to personalize! Enjoy!
Ingredients:
For the Chipotle Tortilla Chips:
- 4 flour tortillas ( I used the soft taco size)
- Caramel Kitchen chipotle caramel sauce
For the Mango Salsa:
- 2 ripe mangos, diced (I like using the small yellow ones because their flesh is more firm)
- 1/2 large red bell pepper, diced
- 1/4 medium red onion, finely diced
- 1-2 small ripe avocados, diced (not too ripe or they will get too mushy)
- 1/2 -1 jalapeño, finely diced (add more or less for desired spiciness)
- 2 Tbsp coarsely chopped cilantro
- 1-2 limes for juicing (to taste)
- pinch of salt
- dash of pepper
Directions:
For the Chipotle Tortilla Chips:
- Preheat oven to 425 degrees.
- Line 2 baking sheets with parchment paper or silicone mats.
- Place two tortillas on each baking sheet.
- Warm up the chipotle caramel sauce until it is very liquid-y. Drizzle over the top of the tortillas and use a pastry brush to spread and even layer over the entire tortilla. Flip the tortillas over and repeat until both sides are evenly coated.
- Use a pizza cutter or knife to cut 8 wedges in the tortillas and spread them out so they are not touching each other.
- Bake for 5 minutes, use tongs to turn the chips over and cook for 4 minutes longer.
- Flip the chips one more time and cook for an additional 2 minutes. (You might want to rotate your pans half way through the baking process).
- Remove from the oven and allow to cool before serving.
For the Mango Salsa
- Put the mangos, onion, peppers, cilantro, avocado and jalapeño in a medium bowl and gentle toss to evenly mix.
- Beginning with 1 lime, squeeze the juice over the salsa, adding more to taste.
- Sprinkle on a little salt and some fresh ground pepper.
- transfer to a serving bowl and garnish with a little more cilantro.
- Serve with Chipotle Tortilla Chips!
