Here is a perfect one dish dessert that can be served family style or divided onto individual plates. Either way if you are a chocolate chip cookie lover, (like me) or a brownie lover (like me as well), you will love the combination of both in this deep dish skillet brookie. It has a rich, gooey chocolate-y brownie base with buttery chocolate chip cookie dough swirled and baked on top. It really is the best of both worlds. And what brings it all together is a topping of vanilla ice cream with a drizzle of our salted and chocolate caramel sauces. Two favorite treats, two favorite sauces, one perfect dessert! Enjoy!
Ingredients:
Brownie Batter:
- 1/3 c butter, melted
- 1/2 c brown sugar
- 1/4 c sugar
- 1/3 c unsweetened cocoa powder
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/4 c flour
Chocolate Chip Cookie Dough:
- 1/4 c butter, softened
- 1/4 c brown sugar
- 1/4 c sugar
- 1 large egg
- 1 tsp vanilla extract
- 2/3 c flour
- 1/8 tsp baking soda
- pinch of salt
- 1/3 c chocolate chips, divided
Garnish:
- vanilla ice cream
- Caramel Kitchen salted caramel sauce
- Caramel Kitchen chocolate caramel sauce
Directions:
- Preheat oven to 350 degrees
- Lightly grease a 9-10 inch cast iron skillet and set aside.
For the Brownie Layer:
- In a medium bowl, combine the sugars and butter and whisk until the sugar is dissolved.
- Add the cocoa powder and whisk until well combined.
- Beat in the egg and vanilla and continue to mix in well.
- Fold in the flour and salt and stir until fully incorporated, smooth and thick.
- Pour the brownie batter into the bottom of the prepared skillet and smooth until it's evenly spread out.
For the Chocolate Chip Cookie Layer:
- In a separate medium bowl, beat together the sugars and butter until light and fluffy.
- Add the egg and vanilla and mix until incorporated.
- Add the flour, baking soda and salt and continue to mix until fully incorporated.
- Fold in half of the chocolate chips.
- Drop spoonfuls of the cookie dough over the brownie batter in the skillet.
- Sprinkle on the remaining chocolate chips.
- Bake for 30-35 minutes or until the cookie is golden brown and the edges begin to pull away from the sides of the skillet.
- Allow to cool slightly before serving if you want to eat it hot, or cool completely if you don't like melted ice cream!
- Top with scoops of vanilla ice cream and a drizzle of salted and chocolate caramel sauces.
