Banana Bread Bourbon Caramel Ice Cream Cake


For Banana Bread:

  • 2 cups sugar
  • 1 cup butter, softened
  • 5 eggs
  • 2 cups flour (can use gluten free)
  • 6 Tbsp buttermilk (can also use regular milk)
  • 2 tsp baking soda
  • 1 ½ cup mashed ripe bananas (4-5 small)
  • 1 cup chopped nuts (optional)
  • Caramel Kitchen Bourbon Caramel Sauce, room temperature
  • Vanilla Ice Cream, softened


  1. In a large bowl, mix all of the ingredients together and let the batter sit at room temperature for 1 hour. 
  2. Preheat oven to 350 degrees.
  3. Divide batter into 2 greased loaf pans.
  4. Bake for about one hour, check for doneness beginning at the 45 minute mark. When an inserted toothpick comes out clean from center of loaf, your bread is done. It’s ok if the outside crust looks dark.
  5. Let stand to cool. Loosen sides of loaf with a knife to release. Only one loaf is needed for the layer cake. Enjoy the other loaf sliced with your favorite Caramel Kitchen caramel sauce or make two ice cream cakes!

*Notes: Not all ovens cook the same, if you still see liquid on the top of your loaves, continue cooking even if the outside looks dark, the taste will be the same.


  1. Place a strip of plastic wrap into a clean loaf pan, with sides over hanging enough to be able to cover assembled cake. Cut banana bread loaf horizontally into three even layers. Place the first layer on top of the plastic wrap inside of the loaf pan. Scoop vanilla ice cream on top of bread and spread evenly, making sure to cover all corners. Drizzle and even layer of bourbon caramel sauce over the ice cream. Place middle slice of banana bread over ice cream and caramel layer. Continue with another layer of ice cream and caramel, finishing with the top layer of banana bread. Cover with the overhanging plastic wrap and put in freezer for at least an hour or overnight.
  2. To serve, remove from loaf pan and unwrap. You can trim any overhanging bread and ice cream to make look uniform (an extra treat for you to enjoy!). Slice into desired pieces and serve with an extra drizzle of bourbon caramel sauce.
