Bailey's Rolo Brownie Bites

Happy Labor Day! The unofficial last day of Summer!!! If you are having a bbq or get together and are still looking for a dessert to take...MAKE THESE!!! They taste just like a Rolo with an Irish cream kick! Using a boxed brownie mix as the base, these ooey-gooey brownie bites come together quick and are a great last minute option for a spontaneous get together. I'm already planning on adding them to my holiday baking list too! But in the meantime they are the perfect way to enjoy your "final" day of summer off!

Ingredients:

For the Brownies:

  • 1 package brownie mix
  • 1/2 c Bailey's Irish Cream liqueur, (or any brand of Irish cream you may have on hand)
  • 1/2 c vegetable oil
  • 2 eggs

For the Filling:

For the Frosting:

  • 1 c butter, softened
  • 1/4 c cream cheese, softened
  • 1/3 c Caramel Kitchen salted caramel sauce
  • 1/4 c Bailey's Irish Cream
  • 2 1/2 c powdered sugar

Directions:

For the Brownies:

  1. Preheat oven to 350 degrees
  2. Coat two mini muffin tins with cooking spray and set aside
  3. Combine all of the brownie ingredients in a medium bowl and mix until just combined.
  4. Using a small scoop, fill each muffin cavity 3/4 full.
  5. Bake for 12-15 minutes and remove from oven.
  6. Use the back side of a measuring teaspoon to press down the center of each brownie, leaving a slight cavity.
  7. Set aside to cool

For the Filling:

  1. Gently warm the salted caramel sauce and mix in the Bailey's Irish Cream. Mix well to combine.

For the Frosting:

  1. In a medium bowl, whip together the butter and cream cheese until smooth.
  2. Add in the salted caramel sauce and Irish cream and beat until well combined.
  3. Gradually add in the powdered sugar, mixing well with each addition.
  4. Once all of the powdered sugar has been added, beat on high until light and fluffy.
  5. Transfer frosting to a piping bag.

Assembly:

  1. Fill each brownie bite with caramel sauce, careful not to overfill.
  2. Pipe a dollop of frosting on top of the caramel sauce and refrigerate until ready to serve.
