Caramel Kitchen Bourbon Caramel Sauce
Preheat oven to 450°. Line a sheet pan with heavy aluminum foil. Place a layer of bacon on the sheet pan and sprinkle with chipotle powder and brown sugar. (Use more or less chipotle powder depending on how spicy you like it). Rub the seasonings into the bacon. Bake 15 minutes, flip bacon and continue cooking another 10 minutes. Remove from oven and drain grease onto paper towels.
When bacon has been drained of grease and is slightly cooled, cut each strip into thirds and place in a food processor. Chop on high speed until you have bacon bits. Remove bacon into a bowl and pour enough warmed bourbon caramel sauce (about a cup) over the top to make a thick jam.
Use immediately or put in airtight jar until ready to use, warming as needed to make spreadable. Use on meats, crackers, cheese and apples, ice cream, etc.
